This is really anything-goes granola. Feel free to substitute equal amounts of dry ingredients and liquid ingredients. Other options are:

Maple syrup instead of honey

Brown sugar instead of honey

Raisins

Chopped dried apricots

Dried cherries

Pepitas

Sunflower seeds

Pecans, walnuts, almonds

Quinoa for some of the oats

Peanut butter instead of almond butter

Tahini instead of almond butter

Butter instead of olive oil

Coconut oil instead of olive oil

Chocolate chips/chunks (tossed in at the end)

Anything Goes Granola

3 cups rolled oats

1/4 cup flax meal

1/2 cup dried cranberries

1/2 cup unsweetened coconut flakes

1/3 cup almond butter

1/3 cup honey

1/3 cup olive oil

1 teaspoon vanilla

1/2 teaspoon cinnamon

1/4 teaspoon salt

Preheat oven to 300 degrees F. Line a large cookie sheet with parchment or foil.

Combine oats, flax, cranberries, and coconut in a large mixing bowl.

In a separate bowl mix together almond butter, oil, honey, cinnamon and salt. Pour over top of dry ingredients. Mix with a wooden spoon until distributed evenly.

Pour onto prepared pan and spread into one layer. Use two cookie sheets if necessary. Bake for 45 minutes until golden brown and crunchy.

*If granola is not crunchy after baking and cooling, bake for another hour to two hours at 250 degrees F to further dry the granola out.
