Small Batch Salted Caramel Fudge Brownies

Small Batch Salted Caramel Brownies
Makes 8 brownies
Ingredients:
1/4 cup melted butter (4 tablespoons)
1/4 cup + 2 tablespoons dutch process cocoa powder (or regular cocoa powder)
1/2 cup white sugar
2 tablespoons brown sugar
1 egg
1/2 teaspoon salt
1 teaspoon vanilla
1/4 cup all purpose flour
For the salted caramel:
1 cup sugar
1/4 cup water
1/4 cup corn syrup
1/4 cup butter (4 tablespoons)
1/2 cup heavy cream
Instructions:
Make the caramel by combining water, corn syrup, and sugar in a medium saucepan over low heat. Stir just until sugar dissolves then STOP stirring. After 5 to 10 minutes the mixture will begin to turn a light brown then amber color. When it reached a dark amber color, remove from heat (it will be about 350 degrees F).
. Add butter and cream and stir vigorously (mixtures will bubble and froth). Place back on heat, still stirring. Heat caramel until it reaches 255 degrees F. Remove from heat and pour into any heatproof dish - like a cake pan or even muffin tins. Let cool in fridge until hard.
Preheat oven to 350 degrees F. Line a loaf pan with parchment paper.
Melt the butter in a saucepan. In the saucepan or separate bowl, combine sugars, butter, and cocoa powder. Stir until well combined.
Add egg, vanilla, and salt and combine well.
Fold in flour and pour into prepared loaf pan.
Bake for 12 minutes. Remove from oven and place small chunks of caramel on top of brownie. Bake for another 5 to 8 minutes.
Sprinkle with sea salt and let cool.
