Easy Key Lime Pie
I LOVE key lime pie. Thereβs just something so satisfying about it. The aromatic crust like waffle cones, the creamy tart filling, and a heavy dollop of homemade sweetened whipped cream. A dessert like no other.
This recipe is super easy and versatile. No graham crackers? Use saltines or teddy grahams or even Ritz!
No key lime juice? Use lemon or lime or grapefruit.
You will need that can of sweetened condensed milk. Or you could make your own!
Easy Key Lime Pie
Crust:
1 sleeve of graham crackers (9 crackers)
1 tablespoon white sugar or brown sugar
6 tablespoons unsalted butter
pinch of salt
Filling:
4 egg yolks
1 14 oz can sweetened condensed milk
1/2 cup key lime juice (from bottle or freshly juiced)
pinch of salt
whipped cream for topping
Instructions:
Preheat oven to 350 degrees F.
Combine graham crackers, salt, and sugar in a food process or plastic bag. Process into crumbs. If in plastic bag, use a rolling pin to crush crackers.
Melt 6 tablespoons butter. Add to crushed graham crackers. And process again.
Dump crumbs into pie pan and press into the pan using a flat bottomed glass.
Bake for 12 to 15 minutes until lightly golden brown.
While crust is baking make filling. Combine yolks, condensed milk, and key lime juice. Whisk to combine.
Pour into baked crust. Bake for 12 to 15 minutes until just set. Chill and serve with whipped cream.
