Applesauce Bundt Cake with Apple Cider Glaze

2 eggs
1 cup brown sugar
1/2 cup granulated sugar
1 1/2 cups unsweetened applesauce (homemade or store bought)
2/3 cup olive or canola oil
2 teaspoons cinnamon
1 teaspoon ginger
2 cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
Glaze
1/2 cup apple cider
4 tablespoons butter
1/2 cup brown sugar
1/3 cup half and half or milk
1/4 teaspoons salt
1 cup powdered sugar
Preheat oven to 350 degrees. Butter a bundt pan.
Combine eggs, sugars, oil, applesauce and cinnamon and ginger in a large mixing bowl. Whisk until smooth. Add flour, baking soda, and salt and mix until just combined. Pour into bundt cake pan.
Bake for 35 to 45 minutes until toothpick inserted into cake comes out clean.
For the glaze:
Heat apple cider in a small saucepan 15 minutes until reduced down to about 2 tablespoons.
Meanwhile, combine butter, sugar, and half and half in medium saucepan over low heat. Bring to a simmer and cook a few minutes, stirring constantly. Add reduced apple cider. Remove from heat and stir in powdered sugar. Pour over top of cooled cake.
