Small Batch Sour Cream Chocolate Cake with Sour Cream Chocolate Frosting
Pretty much the easiest best chocolate cake around. The chocolate cake is made in one bowl using sour cream and coffee to bring out chocolate flavor. The frosting is made of only chocolate, butter, and sour cream. If you have never had a frosting made of sour cream, you are missing out. It adds a tang and a richness that is unparalleled. And unlike frostings made with powdered sugar, it is the perfect balance of sweet and rich. I also paired the recipe down so that it is just made in an 8x8 inch pan instead of 2 or 3 round cake pans. Sour Cream Chocolate Cake + Sour Cream Chocolate Frosting
Cake:
1 egg
1 cup sugar
1/4 cup + 2 tablespoons vegetable oil
1/2 cup sour cream
1/4 cup + 2 tablespoons cocoa powder
1/2 cup coffee
1 cup flour
1 teaspoon baking soda
3/4 teaspoon salt
Frosting:
6 ounces (or 1 cup) semi-sweet chocolate chips or chunks
1/4 cup butter
1/2 cup + 2 tablespoons sour cream
Instructions:
Preheat oven to 350 degrees F. Line an 8x8 inch pan with parchment paper.
In a medium bowl combine egg, sugar, oil, cocoa powder, sour cream, and coffee. Mix thoroughly.
Add salt, baking soda, and flour and mix until just combined. Pour into prepared pan and bake for 20 minutes.
For the frosting, fill a medium saucepan with 1 inch of water. Bring to a simmer. Turn off heat and place bowl with chocolate and butter on top. Let sit for 10 minutes. Stir melted chocolate and butter together. Let cool another 10 minutes. Stir in sour cream.
