Butterscotch Banana Bundt Cake

Here is another way to use A LOT of brown bananas. This recipe uses 2 cups of banana puree. So if you find yourself with many many bananas, this Butterscotch Banana Bundt Cake is the recipe for you.

Butterscotch Banana Bundt Cake

2 cups banana puree

5 tablespoons butter, room temperature

1/3 cup vegetable oil

1 cup brown sugar

1 cup white sugar

2 eggs eggs

3 cups all purpose flour

2 teaspoons baking soda

3//4 teaspoon salt

1/2 cup plain greek yogurt

1/2 cup milk

Instructions:

Preheat oven to 350 degrees F. Butter and flour a bundt cake pan.

Combine flour, salt, and baking soda together. Combine yogurt and milk together. Set both aside.

In stand mixer fitted with paddle attachment, combine butter and sugars. Beat until light and fluffy, 2 to 3 minutes. Stream in oil while mixer is stirring. Add eggs one at a time, fully incorporating before adding the next. Add banana puree.

Alternate adding dry and wet ingredients until mixture has just come together.

Pour into prepared bundt cake pan. Bake for 30 minutes.

Butterscotch sauce:

1/2 cup brown sugar

1/4 cup butter

1/2 cup heavy cream

pinch of salt

Combine all ingredients in medium saucepan. Melt over low heat while stirring. Bring to a simmer and simmer for 5 minutes. Remove from heat and let cool 10 minutes. Pour over bundt cake.
