Buckwheat Chocolate Chip Cookies
1/2 cup of butter (1 stick) at room temperature
2/3 cup brown sugar
1/2 cup white sugar
1 egg + 1 yolk
1/2 teaspoon sea salt (plus more for topping)
1/2 cup buckwheat flour
1/2 cup whole wheat flour
1/2 cup all purpose flour
1/3 cup chopped toasted pecans
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup to 1 1/2 cups chocolate chunks
Instructions:
In stand mixer fitted with paddle attachment or using hand mixer, beat butter and sugars together for 2 to 3 minutes until light and fluffy and pale yellow. Add egg and yolk and continue beating until fully incorporated. Add all flours, baking powder, soda, and salt right on top and then mix until just combined. Add nuts and chocolate mix for a few more seconds. You can bake these right away in a 350 degree F oven or freeze/fridge the dough. Donβt forget to add the sea salt on top after you bake them.
