Panza's 3-Tiered Pupcake
I did not know how much I loved dogs until I got Panza. As I've mentioned before, she is a difficult dog but I wouldn't trade her for anything in the world. She brings so much joy and laughter into my life. And my social circle expanded 5 fold when we adopted her (a puppy is a great ice breaker and the dog park is an underrated location for finding friends).Although we tried every trick in the book to socialize her from a young age, she still remains fearful of many things and very sensitive. She barks at people who approach us (including children), she has some leash aggression issues, and she is more stubborn than a mule. Every day we work on making her feel more at home in this world. Luckily she loves our apartment and feels very comfortable there. We still take her to dog obedience classes to keep working on some of her issues. Probably like having a child, I really wonder what I did wrong to make my dog (or child) the way they are. There have been more than a few occasions where I have felt so terrible because I thought I messed her up. But sometimes it's nothing you did right or wrong it's just how the child or dog is. But that's hard to accept because it means it's out of our control.Panza will literally eat anything (except white mushrooms from the grocery store). Food is her number 1 motivation. She gets excited and rushed to my side when I pull the kale out because she likes to eat the stems. She loves when I make a smoothie and pour the last dregs into her bowl. Apples are another favorite along with rice and oatmeal, peanut butter and yogurt. So of course she loved this birthday cake.Sometimes I spend so much time thinking about what she needs that I forget to think about what I need. It's easy to feel guilty about leaving her at home, going on vacation, not taking her to the dog park enough, etc. But when I step back and look at her life I see how awesome it is and that I am giving her a great life. And it is also very important for me to be happy to get a break sometimes, to go on vacation, travel, do the things I love for myself and so I can continue to be a good dog mom.
Pupcake
2 eggs
1/4 cup olive or avocado oil
1/3 cup no sugar added peanut butter
3/4 cup whole wheat flour
1/4 cup oats
1 teaspoon baking powder
1 chopped apple
Frosting
1/2 cup plain greek yogurt
1/4 cup peanut butter
For the pupcake
Preheat oven to 350 degrees F. You can bake this cake in 2 6 inch cake rounds, in muffin tins, or in 3 small tins. Oil the pans you decide to use.
Whisk together all wet ingredients. Add dry ingredients and fold in chopped apple.
Bake for 15 minutes or less or more time depending on what kind of pan you use.
For the frosting
Mix together yogurt and peanut butter. Frost cooled cake.
