Butterscotch and Peanut Butter Cereal Bars (aka Special K bars)
The Super Bowl is this coming weekend. And I'm just gonna say it - I don't like football. At all. I never have. However, recently, I started paying attention to football, for 1 reason - Colin Kaepernick. That guy is the best. And his actions have brought about discussions on race and inequality into the mainstream. I taught a sociology class this summer at UCSB and he was a topic of discussion that allowed students to make the connection between popular culture, racial powder dynamics, gender, and social class.Here's a recipe for your Super Bowl get together. Use almost any cereal you have in your cabinet to make these bars. The original recipe from my childhood calls for Special K cereal but when I went to the grocery store to buy it, I discovered that 1 box of Special K was $6!!! So I went for a cheaper alternative from Trader Joe's.
Butterscotch Peanut Butter Cereal Bars
14 oz. cereal (Special K or other flaked cereal)
1 1/2 cup peanut butter
1/2 cup butter
1 1/4 cup brown sugar
1/4 cup heavy cream
Topping
12 oz. chocolate chips
6 oz. butterscotch chips
Place cereal in medium bowl. In a saucepan over medium heat, combine butter, sugar, peanut butter and cream. Cook for about 5 minutes until sugar has melted.
Pour saucepan mixture over cereal. Stir until cereal is coated. Press into 9x13 inch pan.
Combine chocolate and butterscotch chips in saucepan over lower heat. Melt and stir until combined. Pour over top of bars and sprinkle with sea salt.
